Fermentation at a controlled temperature (17-19°C) takes place with selected yeasts. Foaming in autoclave using the Martinotti method for at least 30 days.Tasting: It is pale straw yellow in colour. Dense and persistent mousse. The nose is intense, clean and fine with notes of acacia honey and lemon grass with an elegant ripe fruit background.Combinations: Due to its residual sugar it is suitable as a soft aperitif and for its fragrance, at the end of a meal.
