Calcareous and lean, it is dry and shallow especially at higher altitudes.Vinification: After harvesting, the grapes are crushed and undergo soft pressing with pneumatic presses and static decantation of the must. Fermentation takes place at a controlled temperature (17-19°C) with selected yeasts. The wine is then placed in steel autoclaves where frothing takes place using the Martinotti method. The sparkling cycle lasts a minimum of 30 days.Tasting: It is pale straw yellow in colour with a dense and persistent mousse. The nose is distinguished by notes of ripe apple and yellow peach. In the mouth it is exuberant and immediately pleasant: it bewitches the palate with fruity sensations and unmistakable softness.Combinations: Excellent to drink chilled as an aperitif, the Veneto tradition calls for it with soppressa and 'sarde in saor', but you can try it with baozi stuffed with curried prawns in perfect fusion style. Excellent with shellfish, perfect with crudités: from red prawns from Marzara to a perfectly executed Usuzukuri sashimi.
