Calcareous and lean, it is dry and shallow especially at higher altitudes.Vinification: Vinification is carried out by soft pressing with pneumatic presses and static decantation of the must. Fermentation at a controlled temperature (17-19°C) takes place with selected yeasts. Foaming in autoclave using the Martinotti method for at least 30 days.Tasting: Pale straw yellow in colour, traversed by fine bubbles. Fruity aromas emerge from the bouquet of this sparkling wine, intense hints of apple and pear that are echoed on the sip, enhanced by the dense texture of the perlage.Combinations: Very versatile, it is particularly appreciated as an aperitif, with hors d'oeuvres and appetisers in general, with cheese and light cold cuts.
