The product is then left to mature on the lees for 3-4 months with continuous battonage.Tasting: Pale yellow in colour with greenish reflections. The perlage is fine, creamy and persistent. The nose is of great intensity with citrus notes of grapefruit and bergamot combined with aromatic notes of white peach and acacia flowers. In the mouth, the product is very fresh with an acidity that is never aggressive, the body is slender and light combined with a distinct sapidity that gives the product excellent drinkability.Combinations: Prosecco Extra Brut is ideal with creamed dentex, crudités, fried fish and battered vegetables. A wine for the whole meal, it goes perfectly with fish-based first courses such as risotto with langoustines, spaghetti with lobster. A daring and successful combination with grilled or baked eel.
