It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds. Vinification: Vinification takes place with crushing and soft pressing with rapid separation of the must from the skins. The must ferments in steel tanks at a controlled temperature of 15-16°C in order to preserve the original aromas. Once the alcoholic fermentation has taken place, it proceeds to the prise de mousse in an autoclave. The sparkling process using the Martinotti method lasts 40 days. Tasting: Straw yellow in colour with greenish reflections in the glass, a broad and persistent mousse gives way to floral hints of white flowers and fruity hints of yellow peach. In the mouth it is vibrant, with balanced acidity and softness. Combinations: The perfect aperitif bubble, this sparkling wine lends itself to pairings throughout the meal. It prefers fish dishes: hors d'oeuvres, risottos and fried dishes are its favourites.
