The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora wind and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary.Vinification: Harvesting at the beginning of September and soft pressing are followed by fermentation in stainless steel tanks at a controlled temperature of 15-16° C. Maturation takes place on the fine lees for 3 months.Tasting: It is straw yellow in colour with green highlights. The nose releases intense notes of citrus, pink grapefruit, sage, tomato leaf and tropical fruit. On the palate it is fresh, taut, pleasant in its aromatic persuasiveness and expressiveness.Combinations: Excellent as an aperitif and for light hors d'oeuvres, it goes well with vegetable first courses such as risotto with radicchio, with cheeses such as Piave or light main courses. Recommended serving temperature: 10-12° C.
