Age of the vines: 6-60 years, depending on the vineyard Altitude: 100 - 300 m. Exposure: west Yield80-90 hl (2.5 kg per plant) Breeding system: Guyot (4800 vines per hectare), Pergola Veronese (3000 vines per hectare) Method of defence: Certified organic viticulture Loaded with gems: 6-8 buds per vine Alcohol: Vol. 12% Total acidity: 5.95 g/l Ph: 3.26 Serving temperature: 8-10 °C Grape harvest: Manual harvest in mid-September for the Trebbiano di Soave grape and in October for the Garganega grape. Vinification: Destemming and pressing of the grapes. Selection of the first-pressing must and temperature-controlled fermentation (16°-18°C) in vitrified cement tanks. Refinement: Maturation of the wine in vitrified cement vats in contact with the finest and noblest lees for a variable period of 5-9 months, followed by bottling and marketing, after a minimum resting period in the bottle. Colour: pale straw yellow, with greenish highlights, brilliant. Perfume: fresh and delicate, with hints of vine blossom, cherry, elderflower, citrus and white peach memories Palate: dry, savoury, pleasantly harmonious and balanced, with good fruit concentration and good Combinations: Starters, first courses and soups, especially if vegetable-based such as asparagus, peas and courgettes, fish dishes and eggs.
