The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora wind and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary.Vinification: The de-stemmed grapes are cold macerated and then processed in reduction with a soft pressing. Alcoholic fermentation takes place in stainless steel at a constant temperature of 16° C. The wine remains on the noble lees for about four months and after bottling is refined in glass for at least two months.Tasting: Clear, bright yellow in colour, it has clean, defined aromas among which wild flowers, jasmine and pear emerge. Notes of incense and saffron. In the mouth, it is compact and vibrant, pleasant and easy-drinking. With good structure and persistence, it reveals a distinct mineral note that lends savouriness to the finish.Combinations: Excellent as an aperitif, it goes well with typical Friulian cured meats and traditionally with eggs and asparagus. It accompanies fresh and fatty cheeses, tasty risottos and fish dishes.
