Pinot Bianco, Ribolla Gialla and Friulano come from the highest south-west-facing terraces of the Manzano hills, Sauvignon from the flat vineyards that enjoy the most fertile and coolest soils. Breeding method: Guyot Planting density: 4,500 plants per hectare Refinement: 3 months in steel and 3 months in bottle Vintage: 2022 – First vintage: 2020 Analytical data: Alcohol 13.5% vol - Acidity 5.3 g/l Longevity: 4/5 years Land: "Ponca' is the typical element of our soil: a sedimentary formation consisting entirely of clayey marl alternating with layers of sandstone. The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora wind and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary. Vinification: After soft pressing, the Pinot Bianco, Sauvignon, Ribolla Gialla and Friulano grapes are vinified separately in stainless steel tanks in order to maximise the particular qualities of each variety. Blending precedes maturation for 3 months on the noble lees, with weekly bâtonnage. This is followed by at least 3 months in bottle. Tasting: A wine that encapsulates the expression of the most characteristic varieties of the terroir. The nose gradually releases harmonious complexity, calling the taster to a playful olfactory exercise: fresh hints of penetrating flowers, jasmine, honeysuckle and orange blossom with hints of medicinal herbs such as mint, sage and lavender. The fruit emerges later, with the initial citrus fruitiness then diluted in apricot, white peach and pear. On the palate, elegance takes on substance in a balanced blend of structure, finesse, pleasant acidity and final persistence. Savoury and mineral. Combinations: Perfect from hors d'oeuvres to main courses of fish, with vegetable dishes. Recommended serving temperature: 10-12° C.
