The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the Bora wind and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary.Vinification: The destemmed grapes undergo cold maceration with a modern atmosphere saturation system to avoid oxidation. Soft pressing follows. Alcoholic fermentation in steel containers, kept at a controlled temperature, is followed by 4 months of refinement on the noble lees before bottling.Tasting: The colour is straw yellow of medium intensity. It has clean, floral aromas in which melon and a light citrus note of blood orange stand out. On the palate it is slender, very fresh and tasty, and the characteristic orange note perceived on the nose can be found.Combinations: Excellent as an aperitif, with finger food and appetisers. Ideal with delicate first courses, such as trofie with pesto and herb risottos. Recommended serving temperature: 10-12° C.
