Age of the vines: 10-50 years, depending on the vineyard Altitude: 95 - 150 m. Exposure: west Yield60 hl (2 kg per plant) Breeding system: Spurred cordon espalier (5000 vines per hectare) Method of defence: Certified organic viticulture Loaded with gems: 8 buds per vine Alcohol: Vol. 13% Total acidity: 6.20 g/l Ph: 3.30 Serving temperature: 12-14 °C Grape harvest: Manual harvest at the end of October, often with double passage to select the ripest grapes, with partial development of botrytis. Vinification: Destemming and pressing of the grapes. Fermentation in French oak tonneaux and Slavonian barrels (c.a. 20-30%). Refinement: After fermentation, the wine matures for approximately 15 months in French oak barrels and in Slavonian barrels. During this time, the wine remains in contact with the fine lees, which are kept in suspension through periodic battonage, thanks to which the wine acquires softness, body and richness of aromas. After bottling, the wine rests for a few months in glass before release. Colour: Golden yellow, bright and intense. Perfume: Rich and broad bouquet. On the nose notes of exotic fruit, yellow peach and dehydrated apricot, nuts and lightly toasted almonds, sweet spices such as saffron, powdered ginger, white pepper, honey and a slight balsamic note. Palate: Full, round, warm and velvety on the palate, with a perfect balance of sensations and a long, lingering finish. Combinations: It also goes well with complex dishes with savoury toppings, such as: risottos or fresh pasta with truffles, mushrooms porcini, pumpkin or a delicate duck ragout. Second courses with fatty fish such as salmon, eel and scallops, and meat dishes such as roast veal with mustard, stewed chicken or baked stuffed guinea fowl.
