White wine - Azienda Agricola Pieropan - Calvarino Soave Classico Doc Format: Glass bottle 75cl   White wine - Azienda Agricola Pieropan - Calvarino Soave Classico Doc Denomination: Soave Classico DOC Geographical Location: hilly area of Soave Classico Terrain: Volcanic, rich in tuff and basaltic rocks Grapes: Garganega 70%; Trebbiano di Soave 30%. Age of the vines: 30-60 years, depending on the vineyard Altitude: 80 - 150 m. Exposure: west Yield60 hl (2 kg per plant) Breeding system: Veronese pergola (4000 vines per hectare) and Guyot Method of defence: Certified organic viticulture Loaded with gems: 8 buds per vine Alcohol: Vol. 12.5% Total acidity: 6.05 g/l Ph: 3.26 Serving temperature: 10-12 °C Grape harvest: Manual harvesting, often with double passage, to select the ripest grapes. Harvesting begins in mid-September for the Trebbiano di Soave grape and in October for the Garganega grape. Vinification: Destemming and pressing of the grapes. Selection of the first-pressing must and temperature-controlled fermentation (16°-18°C) in vitrified cement tanks. Refinement: Maturation of the wine in vitrified cement tanks - ''Tulipes'' - for at least 12 to 15 months. During maturation, the wine remains in contact with the fine lees, through weekly bâtonnage, to enrich its structure and complexity. After bottling, the wine rests for a few months in glass before release. Colour: Straw yellow with bright, greenish reflections when young, golden after ageing. Perfume: Fresh, mineral and floral. It has a broad bouquet with hints of elderflower, aromatic herbs, lemon apple, pear and yellow peach, on the finish crisp cherry, almond and elegant citrine notes. There is an important mineral note of flint. Palate: Straightforward and vertical on the palate. Fresh, elegant and savoury, well balanced, long and persistent. Combinations: Eclectic in its pairings, ideal from aperitifs to the whole meal with dishes of good fatty sweet trend, like a cheese soufflé or creamy risotto.
