Production area: Les Crêtes in Aymavilles, Frissonnière in Saint Christophe. Age 20 years. Terrain (type, exposure, elevation): moraine, loose, sandy slope with north/east exposure. Altitude from 600 to 800 metres above sea level. First year of production: 1991. Annual production: 25,000 bottles. Area, form of cultivation, planting density, yield: Approx. 6.0 ha, Guyot system; 7,500 ft. per hectare planting, rows of vines with cordon and retracing. Yield 9,000 kg/ha. Grape harvest: manual, mid-September. Vinification: Chilling and soft whole cluster pressing of the grapes, 12-day fermentation in stainless steel at controlled temperature (14°C). Maturation 'sur lies' for 3 months. Sensory notes: brilliant, straw yellow. The nose is delicate and floral, with notes of banana and plum. On the palate soft, savoury and mineral. Curiosity: Chardonnay is an international grape variety that has adapted perfectly to the Valdostan terroir, acquiring a mountain character that makes it unmistakably fresh.
