Production area: 7 crus located in different municipalities in the central valley. Age 20 years. Terrain (type, exposure, elevation): moraine, loose, sandy, sloping with south and south-east and north-east exposure. Altitude 550/750 metres above sea level. First year of production: 1995. Annual production: 18,000 bottles. Area, form of cultivation, planting density, yield: Approx. 4.00 ha, Guyot system; 7,500 feet per hectare, rows of vines with a wire trellis and retracing. Yield 8,000 kg/ha. Grape harvest: manual, second half of September. Vinification: selection of grapes, chilling and soft whole cluster pressing of 7 crus, fermentation in 300 L French oak barriques and 12 months' maturation 'sur lies', with weekly bâtonnages. Barriques used at 50% new and 50% second passage. Bottle-ageing for 12 months. Sensory notes: straw yellow with golden hues. The nose is intense and complex, with aromas of white fruit, hazelnut, vanilla, banana and candied citron, and mineral and spicy nuances. The palate is dense and rich, with an elegant and harmonious finish. Curiosity: The Chardonnay Cuvée Bois, at the top of national and international quality, is recognised for its elegance and style. The noble tannins from the selected precious woods, the sur lies maturation and the repeated bâtonnages give it ample complexity and remarkable balance. Serving temperature: 13/15 °C. Recommended glass: Renano ample. Combinations: foie gras, tagliolini with truffles, filet in a hazelnut crust, fondue from Valle d'Aosta.
