First vintage produced: 2005 Production area: Municipalities of Randazzo and Castiglione di Sicilia (Catania) Grape varieties: 98% Nerello mascalese, 2% Nerello cappuccio Vineyard area: produced from all the company's vineyards Yield per hectare: 6-7 tons/ha Terrain characteristics: volcanic Exposure: northern, southern and eastern slopes of Etna, from 600 to 900 metres above sea level. Average age of vines: 5 to 50 years old Breeding: espalier sapling, converted sapling, traditional sapling Harvest period: first and second ten days of October Vinification: temperature-controlled alcoholic fermentation (25-28° C) Refinement: spontaneous malolactic fermentation and maturation in large (10-30 hl) French oak barrels. Bottling after 14 months of ageing in wood and 1 month of ageing in steel.
