Alcohol: 14% Serving temperature: 15 - 17°C Grape harvest:Finished by the end of September. The grapes are selected in the vineyard and harvested by hand into small 15 kg crates. They are gently destemmed to obtain whole berries and further sorted by hand on the sorting table. Vinification: Fermentation is spontaneous in truncated conical oak vats at a controlled temperature, followed by maceration on the skins for about 30 days with brief pumping over. Ageing began in December 2019 and the wine remained 22 months in 225/228-litre French oak barriques, 80% of new wood and 20% of first passage. Does not undergo clarification or filtration Tasting notes: Inky with a vivid, sparkling ruby colour. The nose envelops with hints of red fruit compote, woody sensations, herbal infusions, spices, bitter orange peel, slate and sylvan tones. On the palate it explodes with grace and power, signature tannins and sparkling freshness support the infinite persistence. Tasty.
