Alcohol: 15% Serving temperature: 15 - 17°C Grape harvest: Finished by the first half of September. The grapes are selected in the vineyard and harvested by hand into small crates. They are gently destemmed to obtain whole berries and further sorted by hand on the sorting table. Vinification: Fermentation is spontaneous in barriques and 1000-litre oak conical vats with manual punching-down and attention to temperature control. Approximately 30% of the grapes ferment with the stems. It macerates for 30 days, then racked and decanted. It is aged for 22 months in 300-litre French oak barriques and tonneaux, 80% of new wood and 20% of first passage. It does not undergo clarification or filtration. Tasting notes: Concentrated ruby colour. The olfactory register is a mix of berries, exotic spices, fern, potpourri, carcadè, chewy liquorice, ecucalyptus, cocoa and slate. Chewy and silky, it detonates ample mineral breath, freshness and finely expressed tannins. Persistent, the suggestions perceived on the nose return unaltered. We suggest drinking from 2023 onwards.
