All grapes are selected in the vineyard and harvested by hand into small 15 kg crates. They are gently destemmed to obtain whole berries and further sorted on the sorting table. Vinification: Merlot and Cabernet Franc ferment spontaneously and separately in temperature-controlled cement vats with pumping over, followed by 20 days of maceration. Part of the Cabernet Franc ferments in 500 and 600 litre terracotta amphorae to amplify the floral and fruity aromas of the grapes. When the wine is blended, it is decanted into French oak truncated conical vats to be matured for 8 months. It does not undergo clarification or filtration. Tasting notes: The bouquet offers tones of mint and eucalyptus essence as well as black cherry and blackberry. There is a lot of concentration and fruit essences in this bottle, with a 'burst of freshness' on the finish. Medium to full body and round, smooth tannins.
