Grapes: 100% Nero d'Avola Soil: Medium mixture Breeding System: Backrest Vinification: The grapes are harvested by hand. Alcoholic fermentation takes place in steel tanks at a controlled temperature (22-25°C) for approximately 10 days. During this process, daily punching-down and 2/3 delestage are carried out until the sugars have broken down. After fermentation, the wine remains in contact with the marc for a further 4 days. After racking, malolactic fermentation takes place. After this phase, the wine is transferred to oak tonneaux for 6 months. Alcoholic strength: 14% Oenologist: Vito Giovinco Olfactory scent: The colour is a luminous ruby red, with purple hues. The nose releases elegant nuances of violets, withered roses, cherries and small red fruits. Interwoven with these are spicy notes of black pepper and salty caper. The sip is full, enveloping and balanced. The tannin is dense and long lasting. Combinations: Excellent with grilled meats, roasts and mature cheeses. It also goes very well with structured fish dishes. Serve at 18 °C.
