During this process, about 4 pumpovers per day (one of which in the air) are carried out until all the sugars have been broken down. At the end of this phase, the wine remains in contact with the skins for another week. It is then racked into steel tanks and is ready to undergo malolactic fermentation. After MLF the wine is moved to oak barrels where it matures for about 12 months. Subsequent ageing in the bottle. Alcoholic strength: 13,5% Oenologist: Vito Giovinco Olfactory scent: Ruby red in colour, the nose immediately reveals notes of pomegranate, ripe fruit, sweet spices and graphite.
