It has low fertility and good water-treatment capacity. The terraced layout and perfect exposure allow the grapes to ripen fully. The ventilation is good (bora and winds from the Adriatic Sea), as is the temperature range at night and day. Vinification: The last of the red grapes to be harvested, after pressing the marc is left to macerate in contact with the must at temperatures between 25° and 28° C for a week in large steel tanks. Frequent pumping over allows excellent colour extraction and good body. Malolactic fermentation takes place and then the wine is placed in 30-hectolitre barrels for about 6 months. This is followed by bottle ageing for at least 4 months. Tasting: The Refosco dal Peduncolo Rosso Friuli Colli Orientali di Torre Rosazza has a beautiful intense ruby red colour with violet hues. The nose expresses fruity aromas reminiscent of cherry, blackberry and mandarin together with notes of sweet tobacco. On the palate it opens sternly, then gives way to more complex aromatic sensations; it has a very elegant tannic texture, is fresh and has a spicy persistence in the finish. Perfect with grilled picanha. Combinations: It goes perfectly with first courses with game sauces, grilled meat main courses (perfect with grilled picanha), pork ribs and knuckle, jugged hare. Excellent with traditional Friulian dishes: cotechino, musetto with brovvada and jota.
