The texture is sandy and the pebbles ('graves' in French) guarantee a high temperature range between day and night that enhances the aromas, fragrances and elegance of the grapes. The temperate climate is favourably affected by the presence of the Friulian Dolomites, which provide shelter from the cold northern winds and facilitate the mitigating effect of the Adriatic Sea to the south. Vinification: After pressing and destemming, the marc is left to macerate in contact with the must at temperatures between 25° and 28° C for 4-5 days in large steel tanks. Frequent pumping over allows excellent colour extraction and good body. Maturation in cement vats 4 months. Tasting: Ruby red colour with violet notes. On the nose the varietal notes are immediate, with scents of raspberry and blackberry declining towards hints of undergrowth. In the mouth, it immediately recalls the undergrowth fruits and is warm and enveloping. Combinations: Perfect with pork and wild boar meat, melted cheese and rustic soups. Recommended serving temperature: 18° C.
