The soil is loamy-clayey, moderately alkaline in places and calcareous and located on marl dating back to the Eocene era, so the skeleton, including the presence of fossils, may be common or abundant. The permeability of the soil is average and its capacity to retain water is very low. Vinification: The grapes were harvested in the first half of October when they ripened late. Destemming is followed by soft crushing. Malolactic fermentation takes place in steel. Bottling is followed by ageing in the bottle for at least 3 months. Tasting: It is ruby red in colour, with violet hues. The nose has marked hints of red fruits, vinous and spicy. In the mouth, the flavour is dry, warm, medium-bodied, velvety and well balanced in tannin. Combinations: It goes well with pasta dishes, meats and mature cheeses.
