It rests on a very ancient layer -a paleosol- called 'caranto'. The climate is generally temperate and humid thanks to the proximity of the sea, but there are strong temperature excursions due to the alternation of cool (Bora) and hot-humid (Scirocco) winds. Vinification: After destemming and crushing, vinification takes place in steel with daily pumping over and maceration on the skins for 5-6 days at a temperature of 25-28° C. This is followed by malolactic fermentation and refinement in cement vats. Tasting: Intense red colour with purple hues, on the nose the contribution of the two grape varieties Merlot and Cabernet gives a beautiful complexity, revealing fruity aromas with notes of spices and green pepper. In the mouth it is young and long. Combinations: Cold meats and medium matured cheeses, first courses with meat sauces.
