The soil is loamy-clayey, moderately alkaline in places and calcareous and located on marl dating back to the Eocene era, so skeleton, with the presence of fossils, may be common or abundant. The permeability of the soil is average and its capacity to retain water is very low.Vinification: Part of the wine from the vinification of the harvested Valpolicella grapes was macerated on the Amarone marc for 10-14 days at a temperature of 15 degrees with daily maturation. The resulting wine is then aged in wooden barriques for 9 months and then bottle-aged for at least 6 months before release.Tasting: It is a wine with a deep ruby red colour. The nose is complex and the dominant aromas are the freshness of fruit with hints of spices. In the mouth, it is harmonious, full and velvety, with the right balance of tannins and acid consistency.Combinations: It goes very well with all types of red meat, both barbecued and braised.
