The high Friulian plain guarantees a high night/day temperature range that enhances the aromas, perfumes and elegance of the grapes. The temperate climate is favourably affected by the presence of the Friulian Dolomites that shelter from the cold northern winds and facilitate the mitigating effect of the Adriatic Sea to the south. Vinification: After destemming and crushing, cold maceration follows for 2 days. Vinification is in stainless steel with daily pumping over and maceration on the skins for 2-3 days at a temperature of 25-28° C. Racking and end of fermentation take place without skins. Malolactic fermentation and refinement in cement vats follow. Tasting: It is red in colour, not particularly intense. The nose expresses hints of red fruits and wild strawberries, while in the mouth it is very pleasant, fresh, with soft, round tannins. Combinations: Cold meats and medium-aged cheeses, first courses such as risotto, lamb and poultry.
