The soil is loamy-clayey, moderately alkaline in places and calcareous and laid on marl dating back to the Eocene era, so the skeleton, with the presence also of fossils, may be common or abundant. The permeability of the soil is average and its capacity to retain water is very low.Vinification: The grapes are harvested by hand after careful selection to choose the most suitable bunches for drying. Once placed in the trays, they are left to rest in the drying loft for at least 3 months. During this period they lose on average about 40% of their weight. Crushing takes place at the beginning of February with destemming of the grapes. The fermentation temperature ranges from 12° to 23° C. Slow maceration lasts for 30 days, 12 of which are cold. Manual punching-down is carried out at a frequency of 3 per day. This is followed by malolactic fermentation and ageing in wood and then in the bottle.Tasting: It has an intense garnet red colour, dense and compact. The nose is reminiscent of raisin fruit, while in the mouth it is full-bodied and softly elegant with an intense, enveloping flavour.Combinations: It goes well with game, barbecued meat, braised meats and mature cheeses. Excellent as a meditation wine at the end of a meal.
