The substratum is made up of calcareous marl, is clay loam with a sub-alkaline reaction (pH 7.5-7.9) and is rich in mineral nutrients (potassium, manganese, calcium, iron, zinc). This soil type guarantees a high fixed acidity that, with the same alcohol content and structure, gives elegance and capacity for ageing. In the vineyards, it is not uncommon to find fossils; the permeability of the soil is average, with a low capacity to retain water.Vinification: The grapes are harvested by hand in the first half of October when they ripen late. Destemming and selection take place on the sorting table before crushing. Fermentation lasts about a week at a controlled temperature, followed by a short maceration on the skins. Malolactic fermentation takes place in steel and approximately 20-30% is passed into second-passage French oak barriques. This is followed by ageing in steel and amphora for one year and at least 3 months in the bottle before release.on the market.Tasting: A Valpolicella Superiore for elegance and structure. Pale ruby red in colour, the nose immediately reveals hints of cherry, blackberry and spices (black pepper). In the mouth it is structured but agile, with soft and enveloping tannins. Excellent persistence and drinkability.Combinations: Perfect served at 16-18° C. Excellent with savoury first courses, white meats, mixed grills and medium-aged cheeses such as Monte Veronese.
