The substratum is made up of calcareous marl, is clay loam with a sub-alkaline reaction (pH 7.5-7.9) and is rich in mineral nutrients (potassium, manganese, calcium, iron, zinc). This soil type guarantees a high fixed acidity that, with the same alcohol content and structure, gives elegance and capacity for ageing. In the vineyards, it is not uncommon to find fossils; the permeability of the soil is average, with a low capacity to retain water. Vinification: Part of the wine from the vinification of the hand-picked grapes of Valpolicella is macerated on the marc of Amarone for 10 to 14 days. The resulting wine is then aged in French oak barriques for 18 months. It then rests in the bottle for at least a further 6 months. Tasting: Intense ruby red in colour, it reveals all the chromatic variations of the grape from which it is made, without exceeding in depth. On the nose it is immediately elegant, intense, enveloping with notes of cherry jam, and carries its ripasso experience in notes of morello cherry: then the roasting emerges. In the mouth it is soft, persuasive, without ever tiring thanks to the characteristic acidity of the area. Combinations: Constantly inviting to drink, it is ideal with first courses with a strong flavour, such as risotto with porcini mushrooms or pasta with game ragout, and is an excellent accompaniment to main courses of meat and mature cheeses.
