The substratum is made up of calcareous marl, is clay loam with a sub-alkaline reaction (pH 7.5-7.9) and is rich in mineral nutrients (potassium, manganese, calcium, iron, zinc). This soil type guarantees a high fixed acidity that, with the same alcohol content and structure, gives elegance and capacity for ageing. In the vineyards, it is not uncommon to find fossils; the permeability of the soil is average, with a low capacity to retain water. Vinification: The grapes are harvested by hand after careful selection to choose the most suitable bunches for drying. Once placed in the trays, they are placed in the drying loft for at least 3 months, during which time they lose on average 40% of their weight. Enzymatic processes and the development of noble rot complete the drying process. Towards the beginning of December, the grapes are destemmed, selected on the sorting table and then crushed. A short cold maceration precedes alcoholic fermentation, which lasts about 2 weeks, with frequent pumping over. This is followed by racking, malolactic fermentation and ageing first in tonneaux for 2 years and then at least one year in Slavonian oak casks. Refinement in the bottle lasts at least 1 year before release. Tasting: Intense ruby red colour, tending towards garnet, dense and deep. The nose is immediately seductive, with immediate hints of dark cherries: the drying of the grapes then emerges with a note of marasca cherries under spirits that becomes ethereal with time, with spicy notes of black pepper, cinnamon and liquorice. In the mouth, it is full, velvety, with soft tannins, and does not tire thanks to the fine acidity that guarantees longevity. Combinations: Excellent on savoury meats such as game, mature cheeses and meat-based first courses. Ideal as a meditation wine, best enjoyed at 18-19° C..
