The soil is characterised by sedimentary rock of marine origin.Vinification: After destemming, the grape marc is kept in contact with the liquid part for about 15 days at temperatures between 28 and 30° in steel tanks. During this phase, appropriate pumping over takes place. Afterwards, malolactic fermentation takes place. It matures in French oak barriques for 12 months.Tasting: Pale ruby red colour with slight garnet hues. Complex nose with hints of cherries in spirit, blackberry with spicy notes, roasting and cocoa powder. In the mouth it is slender, elegant tannins, persuasive.Combinations: A red wine that goes perfectly with traditional Piedmontese boiled meats, medium-aged cheeses such as Castelmagno, and first courses with meat sauces, perhaps a ragout of beef from the best Piedmontese breeds.
