Exposed to the south, its soil is marly white limestone and therefore totally dedicated to Barbera, which in this vineyard gives a full-bodied wine suitable for ageing. The planting of the vines is characterised by a considerable slope (up to 20%) that prevents any water stagnation even in the rainiest periods. Vinification: After destemming and crushing, the obtained marc is left to macerate in contact with the must at temperatures between 25° and 28° C in large steel tanks for a week. Frequent pumping over allows excellent colour extraction and good body. Malolactic fermentation takes place and then the wine is placed partly in French oak barriques and partly in 15-20 hectolitre barrels for about 18 months, followed by at least 6 months of bottle ageing. Tasting: Intense ruby red colour with violet hues typical of the variety. The bouquet is intense, enveloping and complex, balanced with the alcohol component: floral notes of violets are followed by hints of overripe fruit, plums, blackberries and blueberries, closing with spices and liquorice. The taste is enveloping and warm, with tannin discreetly and elegantly present that prolongs the olfactory sensations. The characteristic acidity of the variety then guarantees a long life to the wine. Combinations: It goes perfectly with important first courses, traditional Piedmontese meat sauces as well as boiled meats or the classic bagna cauda. A wine that recalls the flavours of autumn and winter, but also an excellent companion for tasty fish recipes, such as codfish. Best served at 18° C.
