Vinification: The grapes are crushed and destemmed and the marc obtained is left to macerate in contact with the must at temperatures between 25° and 28° C for a week in large steel tanks. Frequent pumping over allows excellent colour extraction and good body. Malolactic fermentation takes place and then the wine is placed in 15-20 hectolitre barrels for about 12 months. This is followed by bottle ageing for at least 4 months. Tasting: Intense ruby red colour with characteristic violet hues. Intense, enveloping and complex bouquet, well balanced with the alcohol component. The nose initially releases notes of ripe cherries, plums, violets and spices. In the mouth it is vibrant, with elegant, silky tannin that emerges in the mouth and complexes the olfactory sensations. Excellent acid shoulder, characteristic of the variety. Combinations: Perfect with the whole meal with traditional Monferrato dishes such as agnolotti ai tre arrosti and Cappone di San Damiano D'Asti. Ideal with cheese boards and typical cold cuts, such as Velluto nero della Regina and Filetto baciato di Ponzone.
