From these vines are produced the famous Etna DOC. The province of Caltanissetta is home to one of Sicily's most recent DOCs, the Riesi Marsala is a historic DOC that takes its name from the municipality of the same name in the province of Trapani. Vinification: Syrah grapes from the Maroccoli vineyards were hand-picked into 15 kg crates and transported immediately in the cellar; here they were crushed and destemmed, then the crushed grapes were placed in steel tanks, where alcoholic fermentation began. The grapes were moved twice a day with very short pumping over - between 12 and 18 minutes - depending on the stage of fermentation, so as to respect the skin as much as possible and thus enhance the complexity of the wine. Fermentation lasted 5 to 7 days, with the temperature being kept around 14 to 15 °C in the first phase, 20 to 22 °C in the second phase, and finally, heading towards its conclusion, at 25 to 27 °C with the interruption of refrigeration. Once fermentation was complete, the vats were filled with wine from the same vineyard of origin, followed by targeted maceration for 18-20 days with submerged cap (skins in contact with the wine) and finally racking. During the twelve days of maceration, the temperature is regulated at around 20-22 °C to encourage the dissolution of the O² in small fractions - through micro-oxygenation - in order to improve the structure and stabilisation of the anthocyanins. Malolactic fermentation was carried out in steel; at the end, the wine was drawn off, racked and transferred into French oak barrels for 14 months of ageing. Organoleptic notes: Sweet oriental spices and a faint hint of toasted cocoa accompany the wine at all stages of the tasting, now opening up a space to clear, sunny black fruit, now to more wintry notes of leather and humus. Enveloping touch reminiscent of the texture of velvet with a finish of mint and black pepper. Match: Marinated and grilled lamb chops, accompanied with mint or even a heterodox parmigiana with smoked provola cheese.
