Red wine - Planeta - Cerasuolo di Vittoria Docg Format: Glass bottle 75cl Intro: Sicily is one of the most wine-producing regions in Italy, together with Veneto, Emilia-Romagna and Apulia. Sicily's wine-growing traditions are ancient and date back to the Phoenicians, Romans, Greeks and Arabs. Sicily boasts numerous indigenous grape varieties such as frappato, nero d'Avola, inzolia, catarratto, nerello mascalese and nerello cappuccio, malvasia delle Lipari and moscato d'Alessandria (zibibbo, from the Arabic zibib meaning 'a raisin'). Based on the type of grape, we can understand the cultivation area of the various vines mentioned above: Muscat wines, Moscato di Siracusa and Moscato di Noto we find them in the Syracuse area Wines based on Nero d'Avola, Frappato and Ceraselo di Vittoria DOCG are produced in the province of Ragusa Grillo, Grecanico, Catarratto and Inzolia vines are the protagonists of the Alcamo DOC La Malvasia delle Lipari famous Aeolian Islands in the Messina area On the slopes of Etna, considered 'an island within an island' due to the characteristic lava soil and the microclimate that characterises this area, we find Nerello Mascalese, Nerello Cappuccio, for red, rosé and sparkling wines and Catarratto and Carricante for white wines. From these vines are produced the famous Etna DOC. The province of Caltanissetta is home to one of Sicily's most recent DOCs, the Riesi Marsala is a historic DOC that takes its name from the municipality of the same name in the province of Trapani. Harvest time13 to 22 September. VinificationThe grapes were harvested by hand and by machine and transported to the winery in small carts. Once in the cellar, they were crushed and destemmed, then sent to 114 and 170 hl steel tanks. The grapes were handled three times a day with very short pumping over - between 10 and 25 minutes - depending on the stage of fermentation, so as to respect the skin and the fruit as much as possible. Fermentation lasted 7 to 8 days, with the temperature being kept at around 14 to 15 °C in the early stages and then, as it drew to a close, refrigeration was suspended and the final alcoholic degrees took place at temperatures between 24 and 25 °C. Once fermentation was finished, the skins remained in contact with the wine for 13/15 days and were then racked off. Malolactic fermentation took place in the same tanks; once it was completed, between December and January, after racking following malolactic fermentation, ageing began, again in 114 hl and 170 hl steel tanks. Organoleptic notes: Cerasuolo has an extraordinarily recognisable nose that is a mosaic of red fruits and spices. The fruits include Marsala strawberries, mulberry and pomegranate. The spicy part is reminiscent of the East, sandalwood, coriander and Sichuan pepper. In the mouth, the wine mirrors the olfactory perceptions and we happily find black pepper mingling with carob and sweet black cherries. Snappy palate with a very savoury and round finish with notes of mulberry. MatchIn season, perfect with a slice of freshly seared tuna; always ideal with white meats and tomato sauce preparations; surprising its harmony with pizzas.
