An ideal position for the variety, which prefers cool, moderately sunny latitudes that allow it to ripen aromatically and express itself with refinement on the nose. The soil is characterised by a vein of white calcareous marls that give the grapes good acidity; synonymous in the wine with freshness, elegance and longevity. In addition, strong components such as clay and iron, typical of the lower Monferrato, give the Pinot Noir character, good body and great depth on the palate. Vinification: In the first week of September 2019, the grapes were harvested by hand. The must obtained from the destemming, undergoes a short cold maceration, then left to ferment in steel fermenters at a controlled temperature of 25-26°C for about a week. The fermentation processes conclude with malolactic fermentation, which takes place when the wine is transferred to first-passage French oak barriques. Here the Pinot Noir stays in contact with the wood for 6 months, then one year in steel before being bottled. Once bottled, the Pinot Noir waits 6 months before being released on the market. Tasting: The wine is ruby red in colour in the glass, enhanced by light garnet reflections. The nose captivates with hints of violets, red fruits and blueberry, followed by balsamic and toasted notes. In the mouth, it is fresh; this acidity together with a good structure and velvety tannin make for a pleasant sip. Appreciable with traditional dishes. Recalls poultry, lamb or venison fillet.
