Ricotta salata al peperoncino is a typical Sicilian cheese made entirely from sheep's milk and left to mature in classic baskets for a few months. It is a hard cheese that is excellent grated and enjoyed on a good pasta dish as is the custom for the traditional pasta alla norma. The addition of chilli gives this cheese a volcanic yet sweet and delicate taste.
