The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. Vinification: The grapes are harvested by hand late in October. After destemming and pressing, the must is fermented at a controlled temperature, partly in steel tanks and partly in oak barriques, where it stays for a year. This is followed by a further 6 months in bottle. Tasting: Golden yellow with faint coppery hues. Nutty peach and apricot can be perceived on the nose. In youthfulness also banana. On the palate, the enveloping sweetness of the sugars is mitigated by the typical tannic set of the vine, which makes it intriguing and never cloying. Combinations: The perfect companion for Friulian desserts such as Gubana and Bisciola, as well as medium-aged cheeses and prosciutto with figs.
