The 'ponca' has low fertility and a good capacity to retain water, giving the grapes and wine unique characteristics such as body and colour, tannins and minerality. The arrangement of the vineyards in terraces, the Ronchi (hilltops) and the perfect exposure allow the grapes to ripen fully. Ventilation is good thanks to the bora and winds from the Adriatic Sea; the significant temperature range between day and night makes the grapes more aromatic and sugary.Vinification: The grapes are harvested late by hand in the second/third decade of September and then placed in the drying loft: the drying process lasts about 60 days. During this period, the grapes lose about 40% of their weight. Afterwards, the bunches are pressed whole and the must thus obtained undergoes static decantation. It ferments partly in stainless steel tanks and partly in oak barrels. This is followed by ageing in French oak tonneaux for at least two years.Tasting: he colour is bright gold. The delicate, enveloping aroma is reminiscent of honey, custard and white peach. On the palate, it captivates with its compact texture and pleasant, intense sweetness.Combinations: A perfect 'meditation' wine, it goes well with savoury, piquant and blue cheeses. Also perfect with dry pastries. Recommended serving temperature: 10-12° C.
